Growing up in Chennai, Prasitha was raised in the company of four cultures (Tamil, Telugu, Malayali, Kannadiga) and the cutlet, in its quiet way, belongs to all of them. Cooking found her young, and the cutlet, with its patience and crisp craft, quietly became a favourite.
The recipe is the simplest of simple. There is no secret spice. The secret is in the time and the care: hand-shaped, double-crumbed, freshly fried only when you order. Good food doesn’t hurry.
Every order arrives with a little pot of each, made fresh on the same morning your cutlets are fried.
Slow-simmered Medjool dates with tamarind, jaggery and a whisper of roasted cumin. Deep, treacly, gently sweet with a lingering tang.
Fresh mint and coriander pounded with green chilli, lime and a pinch of salt. Bright, herbaceous and cooling. A perfect foil to a crisp golden crust.
Order by 2pm the day before. Free delivery within 2 miles of WD6 1RE on orders over £20. A small nominal fee applies on orders under £20. Outside the 2-mile zone, collect warm from our kitchen.
